Ban Kho Pha Do is located along the ridge of Doi Paper in Omkoi District, one of the few areas where the watershed forests remain remarkably intact. Nestled among mountains and dense natural forests, this origin remains largely hidden and untouched. Coffee cultivation here goes beyond agriculture. It is part of a living ecosystem. The local Skaw Karen community continues to grow Arabica coffee in harmony with nature, cultivating it under the shade of forest trees (shade-grown). The diversity of surrounding plant life helps retain moisture and naturally nourish the soil, creating a system that both preserves the forest and sustains a balanced relationship between land, water, and coffee trees. At an elevation of 1,000–1,300 meters above sea level, combined with misty mornings and high humidity, the area benefits from a unique microclimate ideal for high-quality coffee production. The temperature variation between day and night slows down cherry maturation, allowing sugars and acids to develop more fully. This results in a complex cup profile with deep sweetness and gentle acidity. The forest soil, rich in organic matter, further enhances the coffee’s character, adding depth and distinctiveness. Most coffees from Ban Kho Pha Do a mix of Arabica varieties, now increasingly developed toward specialty coffee. Natural processing, in particular, expresses the terroir clearly. It offers citrus notes such as orange and grapefruit, complemented by ripe fruit tones like plum or dried fruits. A brown sugar sweetness is layered with subtle wild nuances, medium body, smooth texture, and a long, well-rounded aftertaste. Coffee from this origin is not just a beverage. It reflects the forest, the way of life, and the transformation of a community. One that uses coffee as a means to care for natural resources and build a sustainable future on the mountains of Omkoi.
