Ban Huay Khanun is strategically located within dense evergreen forests with high-mineral soil. What sets this origin apart is the integration of modern knowledge into traditional Agroforestry. The Shade-Grown coffee trees produce cherries rich in natural sugars. This high sugar content is the crucial foundation for the Fermentation Honey process, designed to extract the maximum potential of this origin like never before. At an elevation of 1,200 – 1,400 meters, the year-round extreme cold and optimal humidity from the Mae Tuen mist create a “superior natural laboratory” for coffee fermentation. The low temperatures allow for precise control during Long Fermentation, maintaining stability while preventing undesirable odors. This environment nurtures beneficial microorganisms, cultivating complex aromatic molecules within the coffee beans. The farmers of Ban Huay Khanun have elevated their Mixed Arabica varieties (Typica & Catimor) to a remarkably more vibrant dimension. This is achieved through a specialized Honey Process involving Controlled Fermentation before the beans are dried with their mucilage intact. This technique allows the beans to fully absorb the sweetness and aromatics from the coffee pulp. The resulting Taste Note features a thick, velvety, and syrupy Body. It is distinguished by notes of Ripe Tropical Fruits blended with the deep sweetness of Wild Honey and Cane Sugar. The Acidity is soft yet vibrant, reminiscent of Yellow Peach, concluding with a complex Yellow Floral fragrance that surpasses standard processing methods.
