Ban Huay Khanun is located in the steep mountainous terrain of Omkoi District, Chiang Mai, a region renowned for its tranquility and largely undisturbed traditional way of life. The soil here is exceptionally fertile, characterized by deep topsoil enriched by centuries of decomposed organic matter from the evergreen forest. The local Pwo Karen farmers naturally cultivate coffee through Agroforestry, where coffee trees grow alongside indigenous forest trees and food crops. This Shade-Grown method not only preserves the vital Mae Tuen watershed ecosystem butalso ensures that the coffee trees receive a complete range of nutrients from the natural cycle. At an average elevation of 1,200 – 1,400 meters above sea level, combined with a geography surrounded by complex mountain ranges, Ban Huay Khanun experiences a cold climate year-round, with extreme cold during the winter months. The humidity from mountain streams and near-constant mist acts as a natural agent for Slow Ripening. This allows the coffee cherries to intensely accumulate sugars and fruit acids, resulting in a high-density bean texture. Coffee from Ban Huay Khanun is celebrated for its bold charm and exceptional cleanliness. The majority are Mixed Arabica varieties, primarily Catimor, blended with heritage Typica strains preserved by the villagers, which have adapted perfectly to the Omkoi climate. Its Taste Note is distinguished by a Bright Acidity with Citrus tones and a succulent sweetness of Stone Fruits like prune or peach. It is further enhanced by the aroma of White Florals and a long-lasting Honey or Brown Sugar finish. The Body is smooth and consistent, reflecting the meticulous care in every processing step from this remote origin.
