Under the canopy of lush evergreen forests in Mae Tuen, Ban Huay Khanun comprises various micro-lots scattered across different altitudes and wind directions. This geographical diversity provides a rich foundation for the Pwo Karen farmers to adapt Agroforestry techniques specifically to each plot. Consequently, coffee cherries from each garden possess unique initial characteristics, ready to be further refined through post-harvest craftsmanship. At an elevation of 1,200 – 1,400 meters, characterized by constant cold breezes and mist, the climate at Ban Huay Khanun presents a “beautiful challenge” for the Honey Process. Farmers rely on years of experience to observe daily humidity and temperature to perfectly time the drying process with the mucilage intact. The slow drying pace induced by the extreme cold allows for the delicate cultivation of flavors within the beans, where climatic variations determine the distinct flavor profiles—ranging from Yellow and Red to Black Honey in each lot. The distinction of Ban Huay Khanun coffee today lies in the farmers’ refusal to be confined to a single method. Instead, they use Mixed Arabica varieties (Typica & Catimor) as a canvas for their taste preferences. Farmers within the village share and experiment with diverse Honey Process techniques, varying the amount of mucilage retained and the drying duration. Some may focus on the crisp cleanliness of White Honey, while others emphasize the deep sweetness and robust Body of Red or Black Honey to bring out the specific flavors of their own gardens. The result is a spectrum of sensory experiences, ranging from the brightness of Citrus and Tropical Fruits to a complex, intense sweetness reminiscent of Wild Honey, Dates, and Cane Sugar. Every sip is infused with the fragrance of Wildflowers, with dimensions that vary according to each family’s technique, while maintaining an exceptionally smooth and consistent Body.
