This area is often referred to as a “Valley of Humidity, ” stretching from north to south with streams flowing throughout the year. What makes the coffee here truly unique is the Shade-Grown method. The coffee trees are interplanted within “Miang” (wild tea) forests and alongside local trees like persimmon and macadamia. This allows the coffee to thrive under filtered sunlight within a pristine upstream ecosystem. Climate: Flavors Cultivated by the Cold At an elevation of approximately 1,200 – 1,500 meters above sea level, the average temperature remains pleasantly cool year-round, typically not exceeding 24°C. This cold and humid climate allows the coffee cherries to ripen slowly. This slow maturation process gives the beans ample time to fully absorb minerals and nutrients, naturally intensifying the complexity of their flavor profile. Varieties and Characteristics While the hardy Catimor is the primary variety, the continued presence of heritage varieties like Typica and Bourbon is particularly noteworthy, as they offer delicate textures and captivating aromas. The most distinctive Taste Note of coffee from this origin is the fragrance of “Dok Kor” (a local wild flower). This is complemented by a complex profile of White Florals, Citrus freshness, and Stone Fruits such as peach or lychee. Depending on the process, you may also experience a lingering Sweet Aftertaste reminiscent of brown sugar or maple syrup.
