The local Pwo Karen farmers strictly follow the “Coffee Protectors of the Forest” way of life, interplanting coffee under the canopy of ancient forest trees. This provides filtered sunlight and immensesoil moisture, creating a unique ecosystem that bestows a distinct mineral profile upon the coffee trees. Rising to an elevation of 1,200 – 1,600 meters above sea level, Khun Mae Ruam experiences an intensely cold climate with higher relative humidity than surrounding areas. The near-constant mist acts as a natural shield against direct sunlight, forcing the coffee cherries into a Slow Maturation process. This exceptionally slow ripening is the key to cultivating flavors with greater intensity and profound depth compared to lowland coffees. Khun Mae Ruam coffee is renowned for its “boldness” and distinct “forest essence”. The varieties focus on Mixed Arabica, with significant heritage Typica and Bourbon strains remaining, blended with Catimor that has well-adapted to the extreme cold. The Taste Note stands in stark contrast to the gentleness of Ban Chan. Khun Mae Ruam is characterized by a Vibrant Acidity reminiscent of Berries or Wild Cherries.
