Doi Tung is located in Mae Fah Luang District, Chiang Rai. One of the highland areas in northern Thailand that has undergone a remarkable transformation, from heavily exploited forest land to a thriving, restored ecosystem. Today, it stands as a coffee-growing region that has developed alongside the regeneration of nature itself. Coffee cultivation here is more than just an economic activity; it is part of a sustainable development approach that connects people, forests, and soil. Most communities on Doi Tung grow Arabica coffee under the shade of large trees (shade-grown), relying on the restored forest structure to retain moisture and maintain ecological balance. This method aligns with nature while supporting long-term quality. At an elevation of approximately 800 – 1,200 meters above sea level, combined with a cool climate and suitable humidity, Doi Tung benefits from a favorable microclimate for high-quality coffee cultivation. The mountain soil, enriched with organic matter from decomposed forest leaves, further contributes to the depth and complexity of the coffee’s flavor. Doi Tung’s coffee is primarily composed of Arabica varieties such as Catuai, Typica, and Bourbon. In recent years, production has increasingly moved toward specialty coffee, with advancements in both varietal selection and processing methods. Including Washed, Honey, and Natural processes. These approaches help express the unique identity of the region. The flavor profile often features notes of yellow and citrus fruits such as mandarin orange and green apple, combined with caramel or honey-like sweetness. The acidity is soft and well-balanced, the body ranges from medium to smooth, and the aftertaste is long, rounded, and easy to enjoy. What truly sets Doi Tung coffee apart is not only its flavor, but the context behind it. The way coffee cultivation is deeply intertwined with forest restoration and genuine community development. Each bean represents a thoughtful balance between economy, environment, and the livelihoods of the people who call this mountain home.
